Vegetarian Cincinnati Style Chili

If you’re from the Cincinnati area or have ever visited, then you know people in this area love their “Cincinnati style chili.” The local favorites, Skyline and Gold Star both offer vegetarian options, but I prefer to make it on my own. 

This recipe isn’t the healthiest, mainly because of the spice mix you will need, but it is delicious comfort food and it is healthier than what you will find in the the restaurants. Like the majority of my recipes, it is also very quick and easy to make. Serving it over whole grain spaghetti makes is super filling and a great leftover lunch option.

Serves 4 - 6 people

Ingredients

1 Packet of Cincinnati Style Chili Spice Mix

3 cups of water

1 can Tomato Paste

1 can diced, unsalted tomatoes, undrained

1 can unsalted red/kidney beans, undrained

1 small bag of frozen corn

Directions

Combine all ingredients in large pot and simmer for 45 minutes - 1 hour. Yes, that’s all you have to do. Told you it was easy! I like to serve mine over spaghetti.

FAST FOOD DOESN’T GET FASTER THAN THIS SHIT. You can eat these sons of bitches raw. Sometimes I like them hot so I toss em on the grill. Use some of that bomb-ass peanut sauce too. Look, just because french fries come from a vegetable don’t front like that shit counts as your veggies for the day. Yeah, I’m already in your fucking head.

GRILLED SUGAR SNAP PEAS WITH PEANUT DIPPING SAUCE
1 pound sugar snap peas
1 tablespoon canola or vegetable oil
1 teaspoon lime juice
8-10 wood or bamboo skewers

PEANUT DIPPING SAUCE
1/3 cup natural peanut butter (nothing full of sugar or a shit ton of salt)
1/3 cup warm water
1 clove of garlic, minced
1 ½ teaspoons grated or minced ginger
2 tablespoons rice vinegar
2 teaspoons lime juice
2 teaspoons agave or honey
1 ½ teaspoons soy sauce
Mix together the peanut butter and warm water in a glass until it is smooth. Add the rest of the ingredients for sauce and keep fucking mixing until it is all uniform. Taste and adjust the seasoning so that you like it. Add more agave if you like stuff sweet, more garlic, whatever you like. That shit is on you.
Cut the ends off your sugar snap peas because those can be stringy.  Run a skewer through the peas widthwise, with about 9 peas per stick. Mix together the oil and lime juice in a small glass and brush it over both sides of the peas so that they don’t stick when you grill them, otherwise your just wasting everybody’s goddamn time.
Bring your grill to a high heat and place the skewers on there for a minute or so on each side. You don’t need to cook them, you just want some char marks on there because that looks fucking legit. Slide the peas off the skewers and sprinkle them lightly with salt. Serve with peanut dipping sauce. Too lazy to cook them? Just serve them shits raw.

Smoked Paprika and Garlic Roasted Cauliflower
Just concocted this super tasty and delicious recipe. Simple ingredients, quick and easy, what more could you ask for?
Ingredients: 1 head cauliflower, chopped into florets 1-2 TBS olive oil 2 cloves garlic, minced 1 TBS smoked paprika A few dashes of black pepper Dash of salt
Directions: Preheat oven to 400 Toss all ingredients until cauliflower is evenly coated Roast 25-30 minutes  Turn cauliflower half way through. Serve warm

Quick and Easy Spicy Black Bean Soup

Ingredients

2 TBS Olive Oil

1 Onion , Chopped

2 Carrots, Chopped

2 Jalapenos, Diced

4 Cloves Garlic, Minced

2 TBS Chili Powder

1 TBS Cumin

1 TSP Black Pepper

4 Cups Low-Sodium Vegetable Broth

4 Cans Low-Sodium Black Beans (2 drained, 2 undrained)

1 Can Low-Sodium Corn or Bag of Frozen Corn

1 Can Low-Sodium Crushed Tomatoes

1 Avocado (optional)

Directions

  1. Heat oil in a large pot over medium-high heat. Sauté onion, carrots and jalapeño for 5 minutes. Add garlic, season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of drained beans, and corn. Bring to a boil.
  2. Meanwhile, in a food processor or blender, process remaining 2 cans undrained beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.
  3. Serve and top with sliced avocado
